The permit comes from the county's Building and Safety Division, with an east-county office serving this area. It is a different portal and a different rhythm from the neighbouring cities in Los Angeles County, and knowing that in advance keeps a schedule honest.

This is hot, dry country in August. Extraction, glazing specification and the mechanical load a modern kitchen adds are all worth checking against systems that were sized for a much shorter appliance list decades ago.
